When I made brunch this past weekend, I made one of my favorites - a vegan spanish potato omelet from Bryanna Clark Grogan. It is served with a delicious Romesco sauce, which is a lovely red color. But what I was missing was some green…so I headed to the crisper and found…broccoli. Broccoli for breakfast? It was fabulous, and it added a great element (and another lovely color) to our brunch. One of the things I love about being vegan is how it pushes you to redefine meals – in more ways than one. Why not have oatmeal for dinner? Why not broccoli for breakfast?
