WATCH: Did Someone Say Vegan Chocolate Pudding?

Organic dark chocolate over 70% cacao is not only sexy and delicious, but good for you.

Cacao contains over 300 identifiable chemical compounds including antioxidants, mood-lifting hormones and stimulating alkaloids. It makes you feel good, rejuvenates the skin, detoxifies the liver and is an aphrodisiac. Better yet, this pudding is healthy.

Coconut contains lauric acid, an anti-viral, anti-bacterial, anti-microbial and anti-fungal. It relieves the symptoms of sore throats and ulcers and helps reduce the risk of heart disease, stroke, cancer, osteoporosis, diabetes, digestive problems, skin cancer and blemishes.

Cashews are rich in copper, iron, phosphorus, selenium, magnesium and zinc. They’re excellent sources of phytochemicals, antioxidants, and protein and have a lower fat content than most other nuts. 75% of that fat is in the form of oleic acid, the same heart-healthy monounsaturated fat found in olive oil.

Here's an incredible recipe for a no-cook, vegan chocolate pudding. You will not believe it has no dairy in it. It is ridiculously creamy and decadent. And only requires a blender! Buen provecho!

Ingredients:

One heaping tablespoon of organic Fair Trade cacao (chocolate) powder
2 cups of young coconut flesh
(2-4 young coconuts, depending on how much flesh you get from each coconut)
1/2 cup fresh coconut water*
1/2 cup raw cashews
Liberal squeeze of organic agave nectar
1 tsp. organic Vanilla extract
1-2 pinches of sea salt

*You can substitute almond or rice milk or purchase coconut water from a natural food store, but the real thing is much more fun!)

Accompaniments:

Tropical Fruits (mango, papaya, pineapple)
Berries (my favorite - raspberries)

In a blender, add coconut flesh, coconut water, cashews, agave nectar, vanilla, pinch or two of sea salt.

(If you don’t want chocolate today, simply blend these ingredients without the chocolate for a fantabulous vanilla pudding!)

But she’s gotta have it, so… Spoon a heaping tablespoon of cacao into the blender and mix in.

Taste the deliciousness and adjust. Careful not to add too much coconut water or it’ll get soupy.

Serve with a luscious plate of local organic fruits. My favorites: peaches, pineapple, raspberries, mango (the EcoRico Queen of Fruit!)
